Deep Fried Lamb Chops in Matzo Meal Crumb

Light and crunchy, makes a moreish starter or snack!

Ingredients

Lamb chops 6
Soy sauce 1 tbsp
Sake 1 tsp
Ginger 20g
Flour 2 tbsp
Matzo meal 100g
Vegetable oil for frying as required

Method

Use ready separated lamb chops.

Grate the ginger and mix with the ginger juice, soy sauce and sake. Put the lamb chops in the sauce and rub in.

Keep in the sauce for 10 minutes. Make a roux with the flour and water (same quantities) in a separate bowl.

Run the lamb chops through the roux and coat with the matzo meal crumbs.

Deep fry the chops in 170C vegetable oil. Serve with lemon wedges or salad leaves alongside.

Matzo meal is available at many Jewish food markets, it's a crunchy crumb coating.

Tips & Note

●If you can, keep the lamb chops overnight in the sauce at Step 2 to get a really tender but tasty dish.
