Ingredients

Self raising flour 200g
Granulated sugar 60g
Salt a pinch
Baking powder 1 tsp
Egg 1
Melted butter 40g
Milk 200ml
Vanilla extract 1 tsp
Tinned azuki beans (sweet) 1

1
Make the batter: put all the ingredients into a large bowl in order (except the azuki beans) and mix well. Keep in the fridge for 30 minutes.
2
Heat up the taiyaki grill on medium heat then turn it down to low. Pour in 1.5 tbsp batter from Step 1 into each mould. Add 1 tbsp azuki beans on top of each mould.
3
Pour over 1 tbsp batter to cover the azuki beans. Close the lid and cook for 2 minutes.
4
Turn the grill over and cook for another 2-3 minutes, opening the grill every now and then to check for colour. It's cooked when it's nicely browned.
5
This is the taiyaki grill, from Japan, I bought it on Amazon, it's actually very useful for making other fish shaped recipes like fishcakes.
6
This is the tinned sweet azuki beans, available at Japanese foodstores in London. It's handy to keep a tin in the cupboard.

Tips & Note

●Tinned azuki has a lot of liquid so drain well before using.
