Flat Peach with Mozzarella Cheese

Ingredients

Flat peaches 4
Mozzarella cheese 1
Lemon zest as required
Salt & pepper as required
Extra virgin olive oil 2 tbsp
White wine vinegar 2 tbsp

Method

This is the flat peach, normally available from the end of June til the end of autumn. It has a thin skin so you can eat it in some recipes.

Pat dry the mozzarella cheese and rip to large shreds. Peel the flat peach and cut into bitesize pieces and combine on a serving dish.

Peel the lemon thinly and shred to get the zest to sprinkle on the peach and mozzarella. Season very lightly with salt & pepper.

Drizzle with the olive oil then the white wine vinegar before serving.

Tips & Note

●Use really ripe peaches which are very sweet. If they're a bit hard, they'll be too sour and that will be the main taste.
