Sauteed Cod with Oriental Salsa

The salsa tastes so colourful in contrast to the milder fish.

Ingredients

Cod fillets (or haddock) 4
Oriental salsa:
Tomatoes 2
Avocado (small) 2
Spring onions as required
Sweet chilli sauce (shop bought) as required
Lemon or lime as required
Flour as required
Olive oill as required

Method

Season the cod with salt & pepper and keep aside for a while.

Make the salsa: cut the tomatoes and avocado into 1cm dice, roughly chop the spring onions and mix with the sweet chilli sauce and lemon juice.

Pat dry the cod and dredge with the flour. Fry in a hot frying pan with the olive oil until crispy brown on both sides.

Place the cod on a serving dish and serve alongside a green salad or a warm salad, together with the salsa.

Tips & Note

●Remove the moisture from the cod at Step 1, this is very important to avoid a soggy limp fish fillet
