Asian Style Marrow and Prawn Stir Fry

Ingredients

Marrow 1/2 (500g)
Prawns 250-300g
Onion 1
Coriander a little
Light brown sugar 1.5 tbsp
Fish sauce (nam pla) 1.5 tbsp
Salt & pepper as required
Potato starch in water as required

Method

The courgette is the baby of the marrow, if you grow it more, it ends up like this.

Peel the marrow thinly and roughly chop to 2-3cm pieces. Finely slice the onion. Peel the prawns.

Put some oil in a frying pan on medium heat. Add the onion and marrow and season with salt & pepper.

When the marrow is soft, add the prawns.

When the prawns are cooked, add the sugar and fish sauce. Fry until the marrow becomes translucent.

Pour in the potato starch in water to thicken the sauce.

Sprinkle roughly chopped coriander or spring onions before serving.
