Jerusalem Artichoke & Beef Donburi

Ingredients

Beef (such as rib eye steak) 300g
Jerusalem artichokes 2 (100-150g)
Onion (large) 1
Ginger 1 thumb
Spring onions 2
Seasoning:
Light soy sauce 4 tbsp
Sake 3 tbsp
Light brown sugar 3 tbsp
Dashi granules 2 tsp
Hot water 200ml
Thickener:
Potato flour or potato starch + water 1 tbsp + 1 tbsp

Method

Thinly slice the beef and cut the ginger into fine strips. Cut the spring onions into diagonal pieces.

Cut the artichoke in half then into 3mm slices. Cut the onion in half then 5mm slices.

Heat the oil in a deep pan and fry the onions on medium heat with the lid on. Add the ginger and seasoning ingredients and bring to the boil. Add the artichokes.

Add the beef then the potato starch in water to thicken.

Sprinkle with spring onions and stir in. Serve on cooked rice.
