Steamed Chicken with Sesame Sauce

Quick, simple and healthy to steam the chicken in a microwave.

Ingredients

Chicken breast fillets (large) 2
Salt 1/2 tsp
Sake 1 tbsp
Sesame sauce:
Tahini 1 tbsp
Light soy sauce 2 tbsp
Rice vinegar 1.5 tbsp
Light brown sugar 1 tbsp
Green beans 1/2 pack
Spring onions 1
Watercress as required
Ginger 2-3 slices

Method

Mix all the sesame sauce ingredients from tahini to sugar together in a bowl.

Put the chicken in a bowl and cover with the salt and sake and keep for 5-10 minutes. Pierce with a fork.

Put the ginger slices on top and sprinkle with the roughly chopped spring onions. Loosely cover the bowl with cling film.

Microwave the chicken (600-650W) for 3-4 minutes. Turn the microwave setting down to low then cook again for 3-4 minutes. Allow to cool.

Lightly boil the green beans and transfer to a plate. Place the chicken (shredded) on top and garnish with the watercress.

Pour over the sesame sauce from Step 1 before serving.

Tips & Note

●If you're not sure about the microwave settings, cook the chicken again at the same setting for one minute at a time after the first 3-4 minutes to check it's thoroughly cooked through
●Once you've microwaved the chicken, keep it in the juice for a while to retain the moisture. Shred the chicken in its juice at Step 5
