Quail Scotch Egg With Minced Lamb

Using pickled quail eggs is the key to these cute bite-sized scotch eggs.

Ingredients

Minced lamb 250g
Salt & pepper a pinch each
Nutmeg (powder) as required
Plain yogurt 4 tbsp
Breadcrumbs 20g
Pickled quail eggs 10
Strong flour as required
Breadcrumbs as required
Vegetable oil (for deep frying) as required

Method

Put the lamb into a bowl, add the salt & pepper, nutmeg, breadcrumbs and yogurt and mix well by hand.

Drain the pickled quail eggs and dredge in strong flour.

Divide 1 into 10 and cover each egg with the mixture.

Heat the vegetable oil to 180C and deep-fry until golden brown.

Tips & Note

After Step 3, the mince cover tends to shrink, so it's a good idea to rest it before you start frying.
