Grilled Sardines (Kabayaki)

Delicious even though it's not eel.

Ingredients

Sardine 1
Marinade:
Soy sauce 1/2 tbsp
Ginger juice 1 tsp
Mirin 1/2 tbsp
Seasonings:
Soy sauce 1 tbsp
Mirin 1 tbsp
Sake 1 tbsp
Flour as required
Vegetable oil 1/2 tsp
Rolled omelette (fine strips) 1/2
Crushed nori, sesame, shiso herbs, radish sprouts if you like

Method

Open out flat the whole sardine and steep in the marinade ingredients for 10 minutes.

Make your rolled omelette in a frying pan.

Lightly dab off the marinade from Step 1 and dredge the sardine with flour.

Put the vegetable oil into a frying pan and heat. Add the sardine and fry on both sides until nicely browned. Add the seasoning ingredients and reduce the sauce until it thickens.

Put some cooked rice into a small bowl. Place your favourite toppings (nori, sesame,etc) and the sliced omelette roll on the top, followed by the sardine.

Add the sesame and radish sprouts, it's ready to serve.
