Avocado Vietnamese Spring Rolls, 2 Kinds

This a fashionable adaptation of a Vietnamese starter.

Ingredients

Avocado 1/2
Mango 1/4
Vietnamese spring roll wrappers 4
Coriander a little
(a)prawns 3
(b)cured ham slices 2
【Sauce】
(A)Thai style sweet chilli sauce 1 tbsp
Lemon juice 1/2 tsp
(B)Sour cream 1 tbsp
Crushed garlic a little
Lemon juice 1/2 tsp
Salt as required

Method

Slice the avocado and mango thinly.

Boil the prawns and cut into half lengthways.

Soften the spring roll wrappers by running through water. Place the avocado, mango, coriander and prawns on top and roll. Repeat to make 2 filled rolls.

Repeat Step 3, using the cured ham instead of the prawns for the remaining 2 wrappers.

Make 2 kinds of sauce. Mix together the ingredients for A.

For sauce B, add the garlic, lemon juice and salt into the cream cheese.

Slice each spring roll into half and arrange attractively onto a serving dish. Pour over both sauces.

Tips & Note

●It's easier to roll up if the avocado and mango are sliced thinly to avoid lumpy gaps.
●When you roll up at Steps 3 and 4, fold in the two sides first before rolling up for a neater finish.
