Chicken and Celery Clear Soup

Just seasoned with salt & pepper and the celery and chicken will taste so delicious.

Ingredients

Celery 2
Chicken breast fillets 120g
Ginger slices 2-3
Sake 1 tbsp
Salt 1/2 tsp
Pepper as required
Sesame oil as required
Crushed sesame seeds as required

Method

Put the sake and ginger into 1 litre boiled water. Add the chicken fillet cut into strips and boil for 10 minutes, removing any scum.

In the meantime, make thin ribbons of the celery using a peeler.

When the chicken is cooked, turn the heat off and allow to cool completely then tear apart the chicken to small shreds. Return to the stock.

Remove the ginger from the stock and turn the heat on. Add the celery and simmer for 5 minutes until soft.

Season with salt and transfer to a serving bowl.

Sprinkle with lots of pepper and crushed sesame seeds. Drizzle with some sesame oil before serving.

Tips & Note

As soon as you remove the chicken from the stock to tear into shreds, it will dry out quickly so be sure to return to the stock as soon as possible.
