Teriyaki Mackerel with Konjak Potatoes

This dish is foolproof, you can't go wrong! It tastes even better when cooled so ideal for a bento lunchbox.

Ingredients

Tinned teriyaki mackerel 1 (125g)
Konjak potatoes 120g

Method

This is the best sauce from the tinned mackerel series in Tesco.

Slice the konjak 5mm thick. Make each strip into a knot:

Score a 2cm length in the middle of each strip, then fold in one end through the cut and pull to get a twist.

Put the whole tinned mackerel and sauce into a small pan. Add 2 tbsp water to the tin, swirl, then pour in.

Add the konjak to the pan and flake the mackerel a little. Simmer on medium heat for 5 minutes and allow to cool before serving so the konjak can absorb the flavours.

Tips & Note

It will be delicious kept overnight so make it the night before and pack for a lunchbox the next day.
