Tuna and Peppers on Onion Pizza

Yes, use onion slices as a pizza base...goes well with a lovely cold drink.

Ingredients

Onions (large) 2
Salt as required
Tuna (tinned, in oil) 1 (150g)
Capers as required
Mayonnaise 1 tbsp
Peppers (red & green) a little
Mozzarella cheese (chopped) as required

Method

Peel the onions and slice thickly to 1cm rounds. Sprinkle salt on both sides. Place in a frying pan (no heat).

Turn the heat on low and fry slowly on both sides until golden and soft. Transfer to an oven tray.

Drain the tuna and mix with the capers and mayonnaise. Place on top of each onion slice.

Chop the peppers into 5mm dice and sprinkle on top of the tuna, Add the chunks of mozzarella cheese.

Put into a preheated oven 170C for 15-20 minutes. It's ready when the cheese has melted and is nice and brown.

Tips & Note

I used chunks of mozzarella but you can use any cheese you like.
