Sweet Onion Scones

Kids love this as a snack!

Ingredients

Flour 300g
Baking powder 1/2 tsp
Salt 3 pinches
Sugar 10g
Onion 210g
Butter 60g
Milk 40-60ml
Mayonnaise 30g

Method

Sift the flour, baking powder, salt and sugar into a large bowl. Add the finely chopped onion and mix together all the ingredients.

Add cold diced butter and slice the mix with a spatula.

Rub with both hands to make breadcrumbs.

Add the milk and mayonnaise and slice with a spatula.

Make a firm square shape about 2-3cm high. Wrap in cling film and keep in the fridge for a short while.

Dust a board and cut 5cm rounds out of the mix, you should be able to make 12.

Place onto a baking sheet on an oven tray and put into a preheated oven 200C for 25-30 minutes. When they're pale brown, they're ready.

Tips & Note

●Try not to knead the dough at Step 2.
●Try to fold the dough at Step 4 to create layers as they bake, this will look better when finished.
●The onions will definitely release moisture, so adjust the amount of milk you add. A soft dough will make a nice fluffy scone, but might loose its round shape, so until you are practised, it's probably better to make a slightly firmer dough.
●It's delicious when hot but even tastier the next day.
