Ingredients

Chicken (thigh or breast) 120g
Onion 1/4
Spring onion 1
Eggs 2
Chicken stock cube 1/4 cube
Hot water 100ml
Sugar 1 tbsp
Soy sauce 2 tbsp
Mirin 3 tbsp
Chilli pepper powder as you like

Method

Here's what I used.

Thinly slice the chicken and onions.

Dissolve chicken stock cube in hot water. Knorr, you need 1/4 cube, for Kallo you need just 1/5 cube.

Add the sugar, soy sauce, mirin and chicken stock into a 12cm wide frying pan and mix well.

Add the sliced onions then the chicken on top.

Baste sauce over the chicken and leave for 5 minutes, If you are very hungry, you can ignore this first cooking period of 5 minutes.

Turn the heat to high and bring to the boil. Turn the heat down to medium and simmer for 5 minutes, turning the chicken occasionally.

Beat the eggs well, slicing through the white. Add half the egg to the pan with half the finely chopped spring onion.

After 30 seconds, add the remaining egg and spring onions, put the lid on and steam cook for 30-60 seconds.

Put your just cooked rice in a bowl, then lay Step 9 gently on top. Sprinkle with some chilli powder if you like.
