Spanish Style Stir Fried Udon Noodles with Scallops

Spanish tinned food is quite delicious. I made fried udon with scallops in vieira sauce.

Ingredients

Udon noodles for 2 people
Tinned scallops in vieira sauce 1
Garlic 2 cloves
Shallot 1
Olive oil 2 tbsp
Dried chilli 1
Black olives 12
Capers 2 tsp
Salt 1-1.5 tsp

Method

Boil the udon noodles beforehand.

Put the olive oil in a frying pan on medium heat and add the smashed garlic and chopped shallots. Stir fry then add the chopped dried chilli (de-seed first).

When the shallot is nicely browned, add half the amount of olives chopped in half, the capers and 3 ladles of hot water to prevent it burning.

Add the scallops together with the sauce and fry.

Add the salt and mix well, then the cooked udon noodles from Step 1 and mix again.

Add the remaining olives, fry, and season with salt if necessary.
