Crunchy Daikon & Cucumber Salad with Tuna

Ingredients

Daikon (mooli) 10cm
Cucumber 10cm
Salt a pinch
Salt & pepper as required
Tinned tuna (in sunflower oil) 80g
Mayonnaise 3 tbsp
Vinegar 1 tsp
Chilli powder 1 tsp

Method

Peel the daikon, then use the peeler to make fine ribbons. Soak in salted water for 5 minutes. Cut the cucumber into fine strips.

Squeeze and remove the moisture from the daikon and put in a bowl with the cucumber. Remove about 80% of the oil from the tuna and add, flaked, to the bowl. Season to your taste with the salt & pepper.

Mix well and add the mayonnaise and vinegar. Finally add the chili powder and mix well before serving nice and cold.
