Lettuce & Tofu Miso Soup Nagano Style

Japanese people from the Nagano prefecture often add lettuce to their miso soup. The sweetness from the lettuce develops into a lovely taste.

Ingredients

Miso (mixed) 40g
Dashi stock granules 1/2 tsp
Hot water 500ml
Tofu 1/2
Fried tofu (aburaage) 1
Lettuce 1/3

Method

This is the pack of tofu available in the UK. It lasts long and is convenient.

Bring the hot water to the boil in a pan, then turn the heat down to medium. Add the dashi stock granules and and dissolve in the miso in a bot of water. Add the fried tofu cut into 8 and the other tofu cut into small dice.

Shred the lettuce by hand and add into the pan.

As lettuce is better crisp, it's enough to heat it through for 1 minute. Serve in the bowl.
