Lime Infused Pickled Cucumber

So refreshing using lime juice instead of vinegar.

Serves 7-8

Ingredients

Cucumbers 2
Salt 2 tsp
Ginger 30g
Soy sauce 90ml
Salt (Maldon) 3 tsp
Water 300ml
Sugar 120g
Lime 1

Method

Wash and clean the cucumber. Slice to 8mm rounds and sprinkle with salt. Keep aside for 30 minutes. Slice the ginger finely to 1mm rounds.

Put the soy sauce, salt, water, sugar and lime juice in a pan and bring to the boil. Wipe off the salt from the cucumber slices and add to the pan with the ginger. Bring to the boil then turn the heat off.

Keep aside for 15 minutes until hand hot, then remove the cucumber and ginger from the pan. Bring the liquid to the boil again, and return the cucumber and ginger to the pan. Turn the heat off.

Keep overnight or, ideally, for 2 days before serving.

Tips & Note

You can use lemon instead of lime if you like, or just ordinary vinegar if you prefer.
