Crispy Leek Pancake

Ingredients

Leek 1
Water 200ml
Sugar 1 tsp
Black pepper a pinch
Chicken stock granules 1 tbsp
Potato starch or cornflour 30g
Flour 50g
Egg (large) 1
Your favourite sauce as you like

Method

This is a leek. Sweet and delicious but huge!

Finely chop the leek and add half to all the other ingredients (except the sauce).

Heat some sesame oil in a large frying pan and fry the other half of the leeks. This will sweeten the whole dish.

Fry for one minute then slowly pour in the mixture at Step 2 and spread evenly.

Pan fry for 3 minutes on medium heat. Turn it over carefully and fry again for another 3 minutes. It's ready.

Enjoy with the any favourite sauce!

Tips & Note

To make it crispy this time, I used potato starch as 40% of the flour amount. In supermarkets, you often see packs of 3 leeks - this recipe will use up any leftover leeks in one go.
