Minced Prawn & Tofu Deep Fried Dumplings

Ingredients

Tofu 200g
Prawns 80g
Frozen edamame beans 30g
Egg 1
Potato starch 3 tbsp
Salt 1/4 tsp
Ginger 10g
Vegetable oil as required
Chilli powder (optional) as required
Lemon (optional) as required

Method

Drain and pat dry the tofu. Chop the prawns and defrost the edamame beans.

Break the tofu with the back of a spoon and mix with all the ingredients except the vegetable oil, chilli powder and lemon.

Put the vegetable oil in a deep pan and heat to 170c for deep frying. Scoop the prawn and tofu mix using two spoons and slide into the hot oil.

Deep fry for 2-3 minutes until they start to float. Turn them over and fry until nicely golden all over.

Remove and drain on kitchen paper.

Sprinkle with chilli powder or squeeze over some lemon juice before serving.
