Freeze-Dried Tofu (Koya Dofu) and Wakame Seaweed Miso Soup

Ingredients

Celery 2
Dried wakame seaweed 1 tbsp
Freeze dried tofu (koya tofu) 1
Hot water 600ml
Miso 35-40g
Dashi stock granules 1/2 tsp

Method

Rehydrate the freeze-dried tofu in plenty of water, then wash well until the water drains clear. Rip into small bitesize pieces. Rehydrate the wakame separately in water.

Boil the water in a pan, add the dashi stock granules and chopped celery and cook for 3 minutes. Turn the heat down to medium and dissolve in the miso.

Add the tofu and wakame and stir. The longer you keep it, the more the flavour comes out from the wakame.
