Broccoli with Braised Tofu in a Satay Sauce

Broccoli is a superfood, I used it with tofu in this dish. The peanut satay sauce that you can buy at a supermarket as a substitute for sesame makes it easy to prepare this dish. It's both healthy and easy to cook.

Ingredients

Broccoli bulb 1
Tofu 300g
Satay sauce (shop bought) 2 tbsp
Sugar 0.5-1 tbsp
Noodle broth, concentrated (mentsuyu) 1 tbsp

Method

Divide the broccoli into big florets and pack them in a small empty pan. Pour boiling water over the top to cover just the stems and turn the heat on. Put the lid on to steam it. When it's cooked, transfer to a basin of cold water.

Put the chopped tofu in a microwaveable dish and cover with kitchen paper. Microwave for 3 minutes then drain in a colander.

In a bowl, mix the tofu, satay sauce, sugar, and noodle broth. You can mix to a smooth paste or leave the tofu in pieces, it's up to you. Add the broccoli chopped into small pieces.

This time I used a peanut satay sauce from M&S. There are so many varieties and brands. You could also use tahini, crushed nuts or a small amount of miso.

Tips & Note

Tofu has quite a bland flavour but when you add a small amount of sesame seeds, nuts, or miso, you get enrich it. Use as much or little sugar as you like. Because the boiling time of the stem and flower part of the broccoli is completely different, make sure you use a small pan to let the broccoli stand upright. Boil it in large florets first, cool it in cold water and chop into smaller pieces to make it easier to cook.
