Celeriac Miso Soup

Celeriac is Mediterranean in origin and quite strong flavoured. It's ideal in stews and soups.

Ingredients

Celeriac 1/4
Onion (medium) 1/2
Dashi stock granules 2-2.5g
Miso (red or mixed) 40g
Hot water 500ml
Spring onions as required

Method

The celeriac is quite hard when you cut it but it cooks quite fast. Cut to bitesize pieces and slice thinly. Slice the onions.

Put the dashi stock in the hot water and add the onions. Boil for 1 minute then add the celeriac.

After 4 minutes, turn the heat down to medium. Add the miso dissolved in water.

Transfer to a serving bowl and sprinkle finely chopped spring onions. Enjoy the aroma!

Tips & Note

It's about right to use 20g miso in 200ml water for a good bowl of miso soup, but if you're boiling any vegetables for 5-6 minutes, you'll need to start with more water
If you're a vegan, replace the dashi stock granules with half a vegetable stock cube
