Healthy Miso Soup with Lettuce and Egg

Ingredients

Water (soft) 400ml
Dashi stock granules 2.5g
Miso (red) 40g
Lettuce leaves 3
Egg 1
Spring onion 1/2

Method

The dashi stock is made with about 1/3 tbsp of granules and the miso is about 3 level tbsp. Finely shred the lettuce and finely chop the spring onion.

When the water boils, turn the heat down to medium and add the dashi stock granules. Add the miso through a strainer or dissolved on a ladle to prevent lumps. Don't allow the soup to boil, otherwise all flavour will be lost.

Pour in the beaten egg, stir once, then turn the heat off after 10 seconds.

Add the shredded lettuce and mix in. Transfer to a serving bowl and sprinkle with the spring onions.

Tips & Note

You can buy miso already with dashi in it in the UK. If you use this, you won't need any dashi stock. Use as much or as little miso as you like to suit your taste.
