Japanese Celebration Azuki Bean Red Rice (Seki Han)

Using tinned azuki beans, this is a quick way to make traditional red rice for celebratory events in Japan.

Ingredients

Glutinous rice 2 cups
Tinned azuki beans 1/2
Sesame seeds (salted) as required

Method

Wash the rice and transfer to a colander to drain. Keep aside for 15 minutes.

I used this tinned azuki beans in water. You can use any brand.

Take out the top half of the beans and use in a different recipe. Mix the bottom half of the beans with the juice to create a lovely red colour.

Put the glutinous rice into a rice cooker and add the azuki beans and 400ml water. The water level should be slightly more than usual for 2 cups.

Switch on the rice cooker. When it's cooked, keep for 10 minutes to steam. Open the lid and mix well. Serve with the salted sesame seeds on top.

Tips & Note

Don't add any seasonings when you cook the rice, you just need to sprinkle with the salted sesame seeds when you eat it. If you like firm red rice, just mix equal parts glutinous rice with ordinary short grain rice.
