Omelette Muffins

Perfect for using up bits and pieces left in the fridge, simply fry and mix with egg and pour into a muffin tray!

Ingredients

Eggs 4
Salt & pepper a little
Cabbage leaf 1
Onion 1/4
Mushrooms 5-6
Carrot (small) 1
Potatoes (small) 2
Green peas 3-4 tbsp
Bacon rashers 2
Chorizo slices 6
Vegetable oil 1 tbsp
Salt & pepper for the eggs a pinch
Butter as required

Method

Here are the ingredients I used - anything you have in the fridge is fine but make it colourful!

Cut all the ingredients into small pieces. Put the oil in a frying pan and add the chopped ingredients in order of hardness.

Season with salt & pepper, but remember the bacon and chorizo is already quite salty. Turn the heat off.

Rub the butter lightly into the muffin tray. Add the ingredients from Step 3 evenly. Put the eggs in a bowl and season with salt & pepper and whisk well. Pour into the muffin tray.

Sprinkle the frozen green peas on top and put in a preheated oven 200C for 20 minutes.

Allow to cool and shrink a bit before removing from the muffin tray with a knife. Transfer to a serving dish.

Tips & Note

You don't need any sauce with this as it's tasty as it is, but it might go well with brown sauce or ketchup.
