Marinated Peppers

Ingredients

Peppers (any colour) 6
Vinegar 2 tbsp
Soy sauce 3 tbsp
Sesame oil 1 tbsp
Sugar 3 tbsp

Method

Wash the peppers, remove the top stalks, cut into 1/4 and deseed. Place in a bowl, cover with cling film and microwave for 3-4 minutes. Turn them over and microwave for a further 3 minutes.

Allow to cool then peel off the skins.

Cut into fine shreds

Mix the vinegar, soy sauce, sesame oil and sugar together in a bowl and add the shredded peppers. Mix well and keep in the fridge for at least 30 minutes before serving.

Tips & Note

The longer you can keep in the fridge, the better the flavours.
