Popeye Spinach Curry

Everyone's favourite curry full of vegetables as well as spinach.

Ingredients

Spinach 330g
Olive oil as required
Garlic 3 cloves
Cumin powder 1 tbsp
Garam masala 2 tbsp
Onion (medium) 2
Tomatoes 3
Double cream 100ml
Salt as required
Honey 1 tbsp
Stock to cover the ingredients
Chilli powder as required
Cooked rice as required
Boiled egg as required
Halloumi cheese as required

Method

When the spinach is fresh, it's 500g. Boil, drain and squeeze out the water. Finely chop the onion, roughly chop the tomatoes in their skins.

Put some olive oil in a pan and fry the garlic on a low heat. Add the cumin powder and garam masala.

Add the onions and fry until soft. Add the tomatoes and continue to fry.

Add the double cream, salt, spinach, honey and enough stock to cover the ingredients. Simmer for 10 minutes.

Adjust the seasoning with salt and chilli powder. Blend the curry sauce.

Serve with boiled egg or halloumi cheese on the side and enjoy with the rice or naan bread.

Tips & Note

●If you want to separate for adults and children, at Step 4, add some chilli powder for the adults.
●If you want to make a bigger dish, you can add steak or any other ingredients you like.
