Rainbow Trout with Sauteed Mushrooms

Nice and juicy with a lovely light sauce.

Ingredients

Rainbow trout fillets 2
Mushrooms 4-5
Soy sauce 1/2 tbsp
Sake or white wine 1/2 tbsp
Mirin 1/2 tbsp
Sugar 1 tsp
Butter 1/2 tbsp
Oil 1-2 tbsp

Method

Season the fillets with some salt & pepper. Put the oil in a frying pan and fry the trout fillets skin side down for 2 minutes.

Add the 2mm sliced mushrooms to the side of the fish and fry.

When the trout skin is crispy, turn it over and fry for 1 minute.

When it's cooked, add the butter and other seasonings. Shake the pan to mix all the ingredients together.

When the butter has half melted, turn off the heat and transfer the trout and mushrooms to a serving dish before pouring over the sauce.
