Avocado & Cured Ham Tempura

Ingredients

Avocado 1
Cured ham slices 8
Tempura flour 50g
Water 80ml
Vegetable oil as required
Cress as required

Method

Choose a slightly firm avocado. Cut in half and remove the stone. Cut the flesh into 1cm strips.

Wrap each slice with cured ham and dip into tempura flour mixed with the water. Deep fry in vegetable oil 170C until nicely browned.

Garnish with the cress before serving with some salt and chilli powder alongside.
