Minced Pork Stuffed Peppers

A better way to stuff peppers is to use them as rings around the stuffing - it cooks quicker as well!

Ingredients

Minced pork 250g
Onion 1/2
Salt & pepper a pinch each
Soy sauce 1 tsp
Chicken stock granules 1 tsp
Breadcrumbs 3-4 tbsp
Egg yolk 1
Peppers (any colour) 3
Vegetable oil 2 tbsp
White wine 50ml
Cheddar cheese (grated) 6 tbsp
Cherry tomatoes 6
Sauce:
White wine 20ml
Ketchup 2 tbsp
Oyster sauce 2 tbsp
Parsley as you like

Method

Finely chop the onions and put in a bowl in the microwave for 2 minutes. Allow to cool then add the minced pork.

Add the salt & pepper, soy sauce, breadcrumbs and egg yolk and knead by hand until sticky.

Slice the peppers to make two large rings, 1.5cm wide. You can use the top and bottom in another recipe. Remove the seeds and pith.

Stuff Step 2 into Step 3. Put some oil in a frying pan and carefully add the stuffed pepper rings on medium heat. Fry for 3 minutes then turn over.

Fry for 1 minute then pour in the white wine. Put the lid on and steam fry for 2 minutes.

Sprinkle the cheese on top and add chopped cherry tomatoes. Fry for a further 3 minutes without the lid.

Transfer to a serving dish and add the white wine in the same frying pan. Allow the alcohol to evaporate then turn the heat off. Add the ketchup and oyster sauce.

Pour the sauce over the stuffed peppers and sprinkle with finely chopped parsley before serving.

Tips & Note

While frying the peppers, the minced meat will shrink. It may fall out of the peppers as you turn them, but you can fix this easily.
