Serves 4 Prep: 10 min Cook: 20 min

Ingredients

Potato (such as King Edward) 500g
Flour 4 tbsp
Vegetable oil as required
Minced pork 400g
Black pepper 1/2 tsp
Sage 2/3 tsp
Thyme 1/2 tsp
Salt 3/4 tsp

Method

1
Peel the potatoes and shred.
2
Put the minced pork, pepper, sage, thyme and salt in a bowl and mix by hand until it becomes sticky.
3
Grab a small handful and make into elongated balls.
4
Put the flour into a small bowl and 5 tbsp water and stir well to mix.
5
Dip the minced pork balls into Step 4, then coat with the shredded potato and pat down firmly.
6
Deep fry in vegetable oil on medium heat until golden brown.

Tips & Note

●Any potato is fine but use medium size to get smaller strips otherwise they will be too long to handle properly when covering the pork balls.
●Step 4 works as a glue between the meat and the potato.
