Microwaved Chinese Leaves & Tuna

It's so easy - just put into the microwave. There's almost no oil, so it's healthy and there's less washing up!

Ingredients

Chinese leaves bunch 1/4
Leek 1
Tinned tuna (in oil) 1 (85g)
Sesame oil 1 tbsp
Salt & pepper a pinch each
Chicken stock granules 1 tbsp
Chinese chilli bean sauce 1 tsp
Egg 1
Sesame seeds as you like

Method

Roughly chop the Chinese leaves and slice the leek diagonally 1cm thick. Put into a bowl.

Add all the ingredients except the egg into the bowl and mix well. Cover with cling film and microwave for 3 minutes.

Remove the cling film and mix well. Remove any moisture from the bowl by tipping carefully. Pour in the beaten egg and mix well. Cover with cling film and microwave for a further 2 minutes.

Mix well and transfer to a serving dish. Sprinkle with sesame seeds if you like.

Tips & Note

There'll be lots of moisture from the Chinese cabbage, so the egg won't firm up but will be a delicious soupy mixture.
