Colourful and Healthy Bruschetta

This will brighten up your dining table!

Ingredients

Baguette slices (1cm thick) 4
Salsa:
Green and yellow pepper 1/6 each
Cherry tomatoes 8
Onion 1/4
Gherkin slices 2
Anchovy fillets 2
Raisins or sultanas 30
Seasoning:
Extra virgin olive oil & Sushi vinegar 2 tbsp each
Salt & pepper a pinch each
Cayenne pepper 1 tsp
Garlic 1 clove

Method

Chop all the salsa ingredients (from the peppers to the raisins) finely and mix together.

Add all the seasonings from olive oil to cayenne pepper into Step 1, mix well and keep aside for 10 minutes, the salsa is now ready.

Bake the baguette slices in a preheated 200C oven for 5 minutes. Rub the clove of garlic on each top surface and bake again for 5 minutes.

Top each slice with lots of salsa from Step 2,it's ready!

Tips & Note

●You can use capers instead of gherkins. You don't have to add raisins if you don't like them - make this your own way. But, try to include colours such as red, green, yellow and white to make it look appetising
●You can use 2tbsp vinegar and 1 tsp sugar if you don't have sushi vinegar
