Baked Potato With Taramasalata

When I went to Athens on holiday, I popped into a local tavern and everyone was eating this, so I copied it here.

Serves 2 Prep: 10 min Cook: 5 min

Ingredients

Taramasalata (shop-bought) 1/2 pack
Potato 1 large

Method

1
Use the taramasalata from any supermarket - this one is from Tesco, 1 pack for £1.
2
Peel the potato and chop into 3-4cm square dice. Put into a bowl, cling film it and microwave for 5 minutes. Mash them when cooked and add the taramasalata.

Tips & Note

It's like adding sour cream to a baked potato, but the saltiness of the cod roe will make you fall in love with taramasalata. It's great to combine the hot potato with cold taramasalata.
