Beef Stroganoff (Oxtail Soup Version)

This recipe uses tinned oxtail soup to make a gorgeous hearty stroganoff-style dish.

Ingredients

Beef rump steak 400g
Leek (medium) 1
Onions (small) 2
Celery 1/2
Button mushrooms 8
Garlic 4 cloves
Butter 40g
Soy sauce 50ml
Plain flour 3 tbsp
【A】
Chopped tomatoes (tin) 1
Oxtail soup tin 1
Dried thyme 1 tbsp
Double cream as required
Buttered rice as required

Method

Make the beef into strips and season with salt & pepper. Dredge with flour.

Cut the onion into half before finely slicing. Cut the white part of the leek into 4 lengthways then into 5mm pieces.

Cut the celery into 5mm pieces and the mushrooms into half. Finely chop the garlic.

Put the butter into a large pan and fry the beef strips on medium heat. Remove the beef to a plate and keep aside.

Into the same pan, add the garlic, leek, onions and celery and fry well. When you get a nice aroma, add the beef and soy sauce.

Add all the ingredients A, and turn up the heat to high. Remove any scum as it boils. Turn down to a low heat and simmer for 15 minutes.

Add butter and finely chopped parsley to just-cooked rice to your desired taste.

Pour Step 6 onto the rice. Pour over as much cream as you like, your-stroganoff-style dish is ready!

Tips & Note

●Beef rump is the part behind the backbone of the animal. It is read meat with less fat.
●Stir and fry the vegetables well to get a lovely taste at Step 5 - be patient!
