Sweet and Savoury Biscuit Marshmallow Sandwich

Easy enough for kids to make!

Ingredients

Marshmallow 1 pack
Ritz crackers 1 pack
Digestive biscuits 1 pack

Method

I used these marshmallows which has white and pick colours. Here are the Ritz and Digestives (Double Chocolate).

Put some cling film on a plate and put some Ritz crackers on top, salty side down. Top with marshmallows cut in half.

Microwave for 10-20 seconds (500W). The marshmallows will expand quickly, so remove from the microwave before they overflow the crackers.

The marshmallow will be sticky so immediately cover with the other crackers and press firmly together. Put in the fridge to set firmly.

For the Digestive biscuits sandwich, place the whole marshmallows on a plate with cling film on (no biscuit) with a good space inbetween.

Scoop off the marshmallows from the plate onto the Digestive biscuits (non chocolate side) and cover with another biscuit to create a double-sided chocolate sandwich.

Allow to cool in the fridge for 20-30 minutes.

Tips & Note

Once the marshmallow gets heated, it immediately becomes sticky then cools firmly to set, so you can make these any time. The coloured ones expand quicker than the white ones, so separate them before microwaving. Put new cling film and use a new spoon each time you make the sweet variety, as the marshmallow will stick straightaway.
