Turnip Brownies

A brownie with a good quality chocolate will have your mouth watering!

Ingredients

Turnip (peeled) 1 (270g)
Water to cover the turnip
Honey 1 tbsp
Dark chocolate (70%) 200g
Unsalted butter 80g
Dark muscovado sugar 90g
Double cream 80ml
Eggs 2
Flour 80g
Cocoa powder 15g
Baking powder 1/2 tsp
Roasted walnuts 100g

Method

Cut 80g turnip into 1cm dice and put in a small pan. Boil until soft in water to just cover and honey.

Finely chop or blend the remaining uncooked turnip (190g).

Put the chocolate and butter into a bowl and allow to melt in a bain marie. Add the dark sugar and allow to dissolve, mixing gently.

Add the double cream and eggs into Step 3 and whisk until nice and shiny.

Add the finely chopped turnip from Step 2. Sift the flour, baking powder and cocoa powder in, and add the chopped walnuts.

Put some greaseproof paper into a tin and pour in the mixture.

Sprinkle the cooked turnip from Step 1 over the top and bake in a preheated oven 160C for 50-55 minutes.

Tips & Note

Make sure to use good quality chocolate and cocoa powder.
