Cauliflower & Bonito Flakes Chinese Style

Keep the texture of the cauliflower by boiling lightly and mix with the bonito flakes and sesame oil to give a lovely flavour.

Ingredients

Cauliflower 130g
Spring onion as required
Bonito flakes 1 pack (2.5g)
Cayenne pepper 1/2 tsp
A Sesame oil 1 tbsp
A Soy sauce 1 tbsp
A Mirin 1 tbsp

Method

Put all the A ingredients into a small pan, bring to the boil then turn off the heat.

Chop the cauliflower to small bitesize pieces.

Put 500ml water into a pan and 1 tsp salt. Boil the water before adding the cauliflower for 1 minute, then drain well.

Transfer the cauliflower into a bowl while still hot and pour over Step 1. Add the bonito flakes and cayenne pepper and mix lightly.

Put onto a serving dish and garnish with diagonal slices of spring onion.

Tips & Note

This can stay in the fridge and be enjoyed hot or cold.
Worth making a stock of this.
Cauliflower cooks really quickly, so only boil for 1 minutes. You can eat cauliflower raw, so don't overboil it.
