Cod in a Swede Broth

Ingredients

Swede 150g
Cod 100g
Ginger juice 1 tsp
Dashi granules (Hondashi) 1 tsp
Water 300ml
Salt a little
Potato starch 1.5 tsp in 2 tbsp water
Spring onion a little
Cayenne pepper as required

Method

Peel the swede and grate it. Slice the cod into bitesize pieces.

Put water, dashi granules, ginger juice in a pan and heat.

Add the grated swede and bring to the boil. Turn the heat down and add the cod pieces, simmer for 15 minutes.

Season to taste with salt.

Add the potato starch in water to thicken.

Transfer to a soup bowl and garnish with finely chopped spring onion and cayenne pepper before serving.

Tips & Note

●The cod can break quite easily, so avoid stirring when it's simmering.
