Smoked Mackerel Fishcakes

A lovely and tasty quick bite at lunch.

Ingredients

Breadcrumbs 6 heaped tbsp
Mashed potato powder 2 heaped tbsp
Hot water 150ml
Smoked mackerel fillet 1/2
Spring onions as required
Sauce:
Maple syrup 1 tbsp
Soy sauce 3 tbsp

Method

Mix all the ingredients except the mackerel and sauce in a bowl.

Remove the skin and bones from the mackerel and chop roughly. Add to the bowl and mix well.

Divide into 4 flat oval patties. Put some oil in a frying pan and add the fishcakes. Put the lid on.

Mix the sauce ingredients together in a bowl. When the fishcakes are nicely browned on both sides, turn the heat off and add the sauce. Coat the fishcakes evenly, then serve.
