Potato Dauphinoise

It's a trendy side dish you often see in restaurants, but it's essentially a potato gratin.

Ingredients

Maris Piper potatoes 400g
Garlic 1 clove
Salt 1 tsp
Pepper 1/2 tsp
Nutmeg 1 tsp
Milk 200ml
Double cream 250ml
Grated cheese 20~30g

Method

Peel the potatoes and slice the potatoes 1-1.5mm thick. You can use a food processor or slicer, of course.

Put the slices into a bowl and add the salt & pepper. Rub these ingredients together well. The starch comes out from the potatoes, but do not wash it.

Put the slices into a deep pan. Add the milk, cream and nutmeg and stir well. Preheat the oven 200C.

Boil the milk on a high heat. Turn down to medium and cook for 5 minutes. Stir regularly, or the potatoes at the bottom will burn.

In the meantime, prepare the baking tray by rubbing scored garlic onto the surface.

Pour the cooked potatoes and milk mixture onto the train. Cover with the cheese and put in the oven for 10-15 minutes.

When the top becomes golden brown, it's ready.

Tips & Note

This is a very basic Dauphinoise recipe. You can add sliced onions or anchovies as you like, to create your own recipe.
If you use a smallish tray, the height will be more and you can then see a millefeiulle effect.
