Lemon Spaghetti

The famous pasta dish from the Amalfi region of Italy, well-know for its lemons.

Ingredients

Lemon 1/2
Basil leaves 5-6
Olive oil 3 tbsp
Parmigiano reggiano 50-60g
Pepper a pinch
Spaghetti 120g
Salt for boiling 1-1.5% of water
Lemon zest as you like

Method

Start boiling the pasta. Add 10-15g salt for 1 litre of water.

Put 2 tbsp olive oil and 2.5 tbsp lemon juice in a bowl and whisk.

Grate 50g cheese and add to the bowl with a pinch of pepper. Add another tbsp olive oil and whisk well.

When the pasta is cooked, transfer directly from the water into the bowl with some tongs. Tear in the basil leaves and mix well.

Continue mixing for 1 minute then put onto a serving dish. Grate cheese over the top and sprinkle with the lemon zest before serving.

Tips & Note

●The pasta water is another secret seasoning for this dish, so don't drain it away completely.
●You can add chicken if you like, or you can add egg yolk and mix (another genuine Amalfi recipe).
