Roast Chicken Rice Ball (Onigirazu)

Use leftover roast chicken or ready packed from the supermarket - it's a great filling snack.

Ingredients

Cooked rice 1 small bowl
Nori sheet 1
Roast chicken as required
Round lettuce as required
Mayonnaise as required
Salt & pepper a little

Method

These are the ingredients. I recommend soft round lettuce, I used ready roast chicken this time.

Lay some cling film on a chopping board to look like a diamond. Place the nori sheet on top in a diamond shape. Put half of the rice on top in a small square shape.

Sprinkle with salt and top with lettuce leaves and seasoned roast chicken. Drizzle over 1 tsp mayonnaise.

Cover with more lettuce leaves and the remaining rice and shape into a good square.

Wrap the nori corner over corner and press down firmly using the cling film to maintain a good square shape.

Leave for 10 minutes.

Slice into two triangles or long strips with the cling film on and using a wet knife. Remove the cling film and serve.

Tips & Note

It's easier to make a good square shape before you wrap with the nori.
