Stir Fried Brussels Sprouts & Tofu

Sprouts and tofu are a perfect match.

Ingredients

Eggs 2
Soy sauce 1 tbsp
Sake or white wine 50ml
Salt & pepper a little
Chicken stock granules 1 tbsp
Sugar a pinch
Spam 1/2 tin
Freeze dried tofu 1
Carrot (medium) 1
Brussels sprouts 10
Sesame oil 1 tbsp

Method

Brussels sprouts are delicious!

Rehydrate the freeze-dried tofu and chop to bitesize pieces, as with the spam. Cut the sprouts into half and thickly slice the carrot.

Put the sugar into the beaten eggs and fry lightly in a frying pan. Remove to a plate.

Put sesame oil in the same pan and fry the vegetables on high heat. Season with salt & pepper.

Add the tofu and spam, stock granules, sake and sesame oil. When the sauce is reduced, return the egg to the pan.

Mix well and stir fry, chopping the egg as you go. Transfer to a serving dish and sprinkle with sesame seeds.

Tips & Note

Spam is already salted so don't add too much salt or soy sauce.
