Steamed Salmon Dumplings

Light and fluffy as a cloud - irresistible!

Ingredients

Salmon fillet 1
Prawns 6
Ginger 1/2 thumb
Onion 1/2-1
Dried shiitake mushrooms 2-3
Green peas (shelled) 1/2 cup
Salt & pepper as required
Soy sauce as required
Potato starch or cornflour as required
Dipping Sauce:
Soy sauce 2 tbsp
Vinegar 1 tbsp
Sesame oil 2 tsp

Method

Blend the salmon. Chop the prawns and finely chop the ginger. Rehydrate the dried mushrooms and cut into strips.

Put the oil in a frying pan and fry the onions on medium heat until soft.

Mix together Steps 1 & 2 with green peas in a bowl and season with salt & pepper and soy sauce.

Divide into small balls and dredge with some potato starch or cornflour.

Place a baking sheet in a bamboo steamer and add the dumplings from Step 4 in a single layer.

Bring a large pan of water to the boil and place the steamer on top to steam for 10 minutes.

The potato starch will dry into a thin skin around the dumplings, these are now ready. Mix all the dipping sauce ingredients together in a bowl and serve alongside.

Tips & Note

●If the dumplings seem a bit soft when dividing the mixture at Step 4, add some breadcrumbs and adjust the texture
●These can be deep fried instead of steaming if you like
