Spinach Salad with Egg Sauce

What a moreish salad!

Ingredients

Spinach 1/4 pack
Boiled eggs 2
Mayonnaise 3 tbsp
Onion (finely chopped) 1 tbsp
Milk as required
Vinegar 3 tbsp
Sugar 1 tbsp
Mirin 1 tsp
Soy sauce 1 tsp
Black pepper as required

Method

Soak the onions in water and roughly chop the spinach.

Warm the vinegar, sugar, mirin and soy sauce in a small pan on low heat. Turn off the heat and add the spinach when the sugar has dissolved.

Peel the boiled eggs and remove the yolks and mix with the mayonnaise and black pepper. Add the milk and make a smooth paste.

Finely chop the egg whites and mix with the onion (drain and pat dry first). Add to Step 3.

Transfer the spinach onto a serving dish and place Step 4 on top. It's ready to enjoy.

Tips & Note

●You can add a pinch of cinnamon at Step 4 if you like.
