Minced Lamb & Tofu Burgers

Prince William loves lamb burgers! Add teriyaki sauce to make them Japanese.

Ingredients

Minced lamb 500g
Tofu 300g
Shiso herbs 1 tbsp
Ginger 1 tsp
Onion 1/2
Egg 1
Soy sauce 3 tbsp
Mirin 3 tbsp
Water 3 tbsp
Vegetables for garnish as you like

Method

Wrap the tofu with kitchen paper and weigh it down to remove the moisture. Finely chop the shiso and onions and grate the ginger. Beat the egg.

Put all the ingredients from the lamb to the egg into a plastic bag and knead to mix thoroughly. You can do this in a bowl if you like. Divide into patties for the number of guests.

Prepare your vegetables for garnish. I used cabbage and mushrooms and microwaved them for 3 minutes.

Put some vegetable oil in a frying pan on medium high heat and fry the patties for 10 minutes until nicely browned on both sides. Dab away excess oil with kitchen paper.

Add the soy sauce and mirin to the pan and fry to coat the burgers before transferring to a serving dish. Add the water to the frying pan in drips and add the vegetables and fry for a few minutes. Season with salt & pepper and serve alongside the burger.

Tips & Note

You can use beansprouts, carrots or courgettes as the garnish.
