Whole Onion Simmered In A Broth

After making a hotpot or a nabe, you always have leftover broth. This is excellent, as it has all the taste from the previous ingredients, so never waste this - let's cook a whole onion in it!

Method

Peel the onions and push through two cocktail sticks through the middle to make a cross - this will hold the onion together while it cooks. Slice a deep cross on the top of each onion right down to the cocktail sticks.

Put the onions in a pan then pour the broth in so they are just covered. Cook on a high heat until it boils then turn down to a simmer for 15 minutes then turn the gas off and leave overnight.

The next morning, you'll see the onion has absorbed some liquid and is very sweet. Microwave for 1-2 minutes and remove cocktail sticks. Put your favourite seasoning such as chilli pepper, yuzu or yuzu pepper and it's ready to eat.

Tips & Note

Of course, instead of a leftover broth, you can use a noodle soup stock for example. The main thing is that the onion will become more flavourful if left overnight to cool.
